Coke Glazed Salmon

(for all you Coke Cap collectors out there)

This recipe was inspired by our visit to the Flying Biscuit Café in Atlanta. Although we were there for breakfast, we got a glimpse of the dinner menu which had an interesting recipe: Coca-Cola glazed salmon. We bought the restaurant’s cook book in hopes of it having the recipe, but it was not featured in the book. So, I decided to make my own version of the dish.

  • 2 cans or 3 cups Coca Cola (regular, I don’t think it will work with diet or coke zero)
  • Salmon fillet
  • Salt
  • Pepper
Pre-heat oven to 450°. Pour Coke into medium pot over medium-high heat and reduce to a little less than about half (around 15 minutes). It should produce a thick glaze. Don’t let it go too long or the sauce will harden. Cut salmon fillet into serving sizes and place in glass dish that has been sprayed with Pam. Season with salt and pepper. Pour glaze down over the salmon and bake in oven about 10-15 minutes, to desired "doneness."

** Cooking times are approximate because our oven needs calibrated and is off by about 20°.
