Nestle Tollhouse Chocolate Chip Cookies with a Kelly Twist

This is an adaptation of the classic cookie recipe of my grandmother Nestle Tollhouse (that's a Friends reference, in case you were wondering).
Actually this is an adaptation of one of my cousin's friends cookie recipe which, in turn, was an adaptation of the classic Nestle Toll House recipe... got that?


Just make 'em, their unbelievable!
  • 2 ¼ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 stick unsalted butter, softened
  • ½ cup shortening
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 tsp. vanilla extract
  • 3 tbs. honey
  • 2 large eggs
  • ½ cup old-fashioned oats
  • 1 ½ cups semi-sweet morsels
  • 1 cup chocolate chunks

Pre-heat oven to 375° F. Sift together flour, baking soda, and salt and set aside. In a mixer, beat together butter, shortening, and sugars. Add eggs, one at a time. Mix in vanilla and honey. Gradually beat in flour, in 3 batches, mixing on low. Add in oats. Remove from mixer and fold in chocolate morsels and chunks. Drop by the spoonful on baking sheet and cook about 10 minutes.

* I use a Silpat to make sure my cookies don’t stick and an air-bake cookie sheet so they don’t get too done on bottom.



** Cooking times are approximate because our oven needs calibrated and is off by about 20°.
