

Just make 'em, their unbelievable!
- 2 ¼ cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 stick unsalted butter, softened
- ½ cup shortening
- ¾ cup sugar
- ¾ cup brown sugar
- 1 tsp. vanilla extract
- 3 tbs. honey
- 2 large eggs
- ½ cup old-fashioned oats
- 1 ½ cups semi-sweet morsels
- 1 cup chocolate chunks
Pre-heat oven to 375° F. Sift together flour, baking soda, and salt and set aside. In a mixer, beat together butter, shortening, and sugars. Add eggs, one at a time. Mix in vanilla and honey. Gradually beat in flour, in 3 batches, mixing on low. Add in oats. Remove from mixer and fold in chocolate morsels and chunks. Drop by the spoonful on baking sheet and cook about 10 minutes.
* I use a Silpat to make sure my cookies don’t stick and an air-bake cookie sheet so they don’t get too done on bottom.
** Cooking times are approximate because our oven needs calibrated and is off by about 20°.
